Line a baking sheet with foil. Preheat oven to 424°F.
Carefully make cuts into each potato every 1/8-inch without cutting all the way through.
Alternate inserting the cheese and butter slices into each cut in the potato. Bake for 35-40 minutes, or until potatoes are cooked all the way through.
Note: if you want the cheese to be more oozy and gooey, bake the potatoes with butter first then add in the cheese for the last 10 minutes.
Top with sour cream and parsley. Serve while warm. Enjoy!
