Place powdered pork rinds in a medium sized bowl. Add a few strips of chicken in the beaten eggs. Using a fork, pick up one piece of chicken and let the excess egg drip off, then cover with pork rind powder.
Repeat the step above for each piece of chicken.
In a medium fry pan on medium to low heat, melt two tablespoons of butter. Add two tablespoons of oil and begin to cover the pan with the chicken strips. You will need to do this in batches, adding two new tablespoons of both butter and oil each time.
Cook tenders for about 5-7 minutes, or until edges brown. Flip and cook for another 5-7 minutes. Season with Cajun seasoning and salt while on the pan.
