In a large bowl, whisk eggs, milk, water, and vanilla extract.
In a seperate bowl, mix flour, sugar, baking powder, and salt. Pour in wet ingredients to dry ingredients and mix well.
In a large thick bottom pot, heat frying oil to 375°F. Cover the bottom of a kitchen funnel,
Cover the bottom of a kitchen funnel with your finger and laddle 1/4 of the funnel cake batter inside. Holding the funnel serveral inches above the oil, remove your finger from the funnel spout and move it around in a spiral motion until all the batter has flowed out of the funnel.
Fry for 3-5 minutes on each side or until golden brown, flipping once in between using tongs. Place it on a paper towel sheet once it is finished to remove excess oil. Repeat for the remainder of the batter.
Top with your toppings of choice and serve warm. Enjoy!
