Chicken Souvlaki Pita

Ingredients

  • 500 grams boneless skinless chicken breast cut into bite sized pieces
  • 5 cloves garlic peeled and minced
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • juice of 1 large lemon
  • 4 pita breads
  • thinly sliced red onions, shredded carrot, sliced tomatoes, sliced cucumbers, crumbled feta, tzatziki sauce (optional toppings)

Instructions

  1. Combine chicken pieces, garlic, olive oil, oregano, salt, black pepper and lemon juice in a large ziplock bag and mix until the chicken is evenly coated.  Seal and refrigerate for 30 minutes, or up to 1 day.

  2. Preheat broiler and place the rack in the middle.  Place skewers on a large baking sheet, and broil for 6-8 minutes, turning once, until the chicken is cooked through and no longer pink inside.

  3. Add chicken and desired toppings to pitas and serve while chicken is warm. Buon appetito!
