Whole Wheat Sesame Bagels

Servings 12 bagels

Ingredients

  • 1 tbsp dry yeast
  • 1 tbsp sugar
  • 1 ¼ cup warm water
  • 3 ½ cups whole wheat flour
  • 1/2 cup honey
  • 1 ½ tsp salt
  • 3 tbsp olive oil
  • 1/4 cup sesame seeds

Instructions

  1. Place yeast and sugar in a large bowl. Pour in warm water (not too warm or it will kill the yeast) and allow yeast to activate for about 10 minutes.

  2. Mix the salt and flour together in a seperate bowl and then add it to the yeast mixture (adding the salt directly may kill the yeast). Spoon in honey and mix well with a large wooden spoon or a mixer.

  3. Once ingredients are combined, fold out dough onto a lightly floured surface and knead for about 10 minutes, eventually forming a ball.

  4. Place oil in a glass bowl and roll around dough to evenly coat. Cover with a damp cloth and allow to rise in a damp environment for about an hour.

  5. On a work surface, shape the dough into a log and cut into 12 equal pieces. Roll each piece into a 9-inch (23 cm) rope. To join the two ends together, slightly overlap them, then roll the seam back and forth using the palm of your hand. Set aside on a lightly floured surface and cover with plastic wrap. Let rise for 30 minutes.

  6. With the rack in the lowest position, preheat the oven to 450°F (230°C). Line two baking sheets with parchment paper. Sprinkle each sheet with 1 tbsp of sesame seeds.

  7. Meanwhile, in a large pot, bring 12 cups (3 litres) of water and the remaining honey to a boil. Poach 3 to 4 bagels at a time for 3 minutes or until slightly puffed, turning halfway through cooking. Remove with a slotted spoon and place on the prepared sheets. Sprinkle with the remaining sesame seeds.

  8. Bake one sheet at a time for 20 minutes or until the bagel are golden brown. Let cool for 15 minutes. Enjoy!
