Easy Jambalaya with Chicken, Shrimp, and Sausage
Ingredients
- 1 tbsp olive oil
- 1 lb chicken breasts chopped
- 1 medium white onion chopped
- 1 medium green pepper thinly sliced
- 2 cloves garlic minced
- 10 ounces andouille sausage sliced
- 8 ounces shrimp
- 1 tbsp Cajun seasoning
- 2 tsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup long grain rice uncooked
- 400 g canned tomatoes
- 2 1/2 cups chicken stock
Instructions

Heat olive oil in a large frying pan and cook chicken breasts for 6-8 minutes. Place in a bowl and set aside.

In the same pan, cook onions for 3-4 minutes until translucent. Add red pepper, garlic, chorizo, shrimp, and cajun seasoning. Cook for another 5 minutes.

Add the chicken back in along with Worcestershire sauce, salt, and black pepper. Stir in and add rice, tomatoes, and chicken stock. Bring to a boil, reduce heat, cover and simmer for about 25 minutes or until the rice is completely cooked and liquid is absorbed. Enjoy!
