Baked Orange Chicken (Gluten Free)
Ingredients
Chicken
- 4 chicken breast cut into bite sized pieces
- 3 eggs whisked
- 1/3 cup corn starch
- 1/3 cup gluten free flour
- 2 tbsp coconut oil
Orange Chicken Sauce
- 1 cup Orange Juice
- 1/2 cup sugar
- 2 tbsp rice vinegar
- 2 tbsp Soya sauce (or tamari)
- 1/2 tsp ginger grated
- 2 cloves garlic minced
- 1/2 tsp red chili flakes
- orange zest from 1 orange
- 1 tbsp cornstarch
Garnish
- sesame seeds
- green onions
Instructions

In a medium pot, add orange juice, sugar, vinegar, soy sauce, ginger, garlic, and red chili flakes. Heat for 3 minutes. In a small bowl, whisk 1 tablespoon of cornstarch with 2 tablespoons of water to form a paste. Add to orange sauce and mix together. Continue to cook for 5 minutes or until the mixture begins to thicken. Once the sauce is thickened, remove from heat and add orange zest.

Heat oven to 400°F.

Place flour and cornstarch in a shallow dish or pie plate. Dip chicken pieces in egg mixture, then flour mixture, and place on a plate.

Heat coconut oil in a large pan on medium-high heat. Using a pair of tongs, carefully place one layer of chicken in the pan and brown for 2-3 minutes each side. You can brown them in batches, adding extra coconut oil to the pan if needed.

Place chicken bites on a baking sheet once they are done browning and place them in the oven to finish cooking for about 20 minutes.

Toss chicken in the orange sauce and evenly coat. Garnish with sesame seeds or green onions and serve over rice if you'd like. Enjoy!
