Golden Cornbread (Gluten & Dairy Free!)

Ingredients

  • 1 cup corn flour
  • 1 cup gluten free flour ( I use Shar's gluten free bread mix)
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/4 cup honey
  • 1 cup milk alternative (I use almond milk)
  • 1/4 cup butter melted
  • 3 large eggs
  • 2 tbsp honey

Instructions

  1. Pre heat the oven to 350° F.

  2. In a large mixing bowl, combine all dry ingredients.

  3. Pour in wet ingredients and mix well. In a separate bowl crack the eggs and add to cornbread mixture. Beat all together with a whisk until just mixed.

  4. Fold cornbread mixture into a large baking dish and cook for 20-25 minutes or until cooked completely through (test by inserting a toothpick to see if it comes out clean). Spread a thin layer of honey on top while the cornbread is warm. Enjoy!
