Thai Peanut Lettuce Wraps

Ingredients
- 2 tbsp olive oil
- 2 cups spinach chopped
- 1 medium onion chopped
- 1 cup carrots shredded
- 1 medium red pepper chopped
- 1 clove garlic minced
- 1 tbsp fresh ginger grated
- 2 chicken breast cooked, chopped
- 2 tbsp soy sauce
- 4 tbsp peanut butter
- 1 tbsp stevia
- 4-6 lettuce wraps
- 4 lime wedges
- peanuts (optional for garnish)
- cilantro (optional for garnish)
Instructions

In a fry pan on medium heat, add 1 tbsp of oil. Spinach, onions, carrots, red pepper, garlic, ginger, chicken breast. Mix and let cook for 3 minutes until slightly softened but still crunchy.

Add soya sauce, peanut butter, and the rest of the olive oil. Mix in stevia. Cook for another 3 minutes.

Spoon into lettuce wraps while warm, and squeeze lime juice on top. Garnish with peanuts and cilantro if you wish!
