Thai Peanut Lettuce Wraps

Ingredients

  • 2 tbsp olive oil
  • 2 cups spinach chopped
  • 1 medium onion chopped
  • 1 cup carrots shredded
  • 1 medium red pepper chopped
  • 1 clove garlic minced
  • 1 tbsp fresh ginger grated
  • 2 chicken breast cooked, chopped
  • 2 tbsp soy sauce
  • 4 tbsp peanut butter
  • 1 tbsp stevia
  • 4-6 lettuce wraps
  • 4 lime wedges
  • peanuts (optional for garnish)
  • cilantro (optional for garnish)

Instructions

  1. In a fry pan on medium heat, add 1 tbsp of oil. Spinach, onions, carrots, red pepper, garlic, ginger, chicken breast. Mix and let cook for 3 minutes until slightly softened but still crunchy. 

  2. Add soya sauce, peanut butter, and the rest of the olive oil. Mix in stevia. Cook for another 3 minutes. 

  3. Spoon into lettuce wraps while warm, and squeeze lime juice on top. Garnish with peanuts and cilantro if you wish!
