The YUMMIEST Enchiladas!

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion diced
  • 1 medium green pepper chopped
  • 1.5 pounds chicken cubed into small pieces
  • 1 4-ounce can green chilis
  • 1 15.5-ounce can black beans rinsed and drained
  • 1 cup corn
  • 8 large tortillas
  • 1 can enchilada sauce
  • 1 cup american or chedar cheese
  • 1/2 cup sour cream
  • cilantro to garnish

Instructions

  1. Pre heat oven to 350 degrees F. 

  2. In a medium pan, heat oil and add onions and green peppers. Sautee for 2-3 minutes, then add chicken and 3/4 of the enchilada sauce. Heat for another 8-10 minutes or until chicken is completely cooked. Season with salt and pepper to taste. 

  3. Fill each tortilla with a good amount of chicken mixture, and add in some green chilis, beans, and corn. Close the tortilla and place in a large baking dish. 

  4. Add the remainder of the enchilada sauce on top of the tortillas. 

  5. Add cheese and sour cream on top, and place in the oven uncovered for 20-25 minutes. 

  6. Garnish with cilantro, and serve warm. Enjoy!
