The YUMMIEST Enchiladas!

Ingredients
- 2 tbsp olive oil
- 1 medium onion diced
- 1 medium green pepper chopped
- 1.5 pounds chicken cubed into small pieces
- 1 4-ounce can green chilis
- 1 15.5-ounce can black beans rinsed and drained
- 1 cup corn
- 8 large tortillas
- 1 can enchilada sauce
- 1 cup american or chedar cheese
- 1/2 cup sour cream
- cilantro to garnish
Instructions

Pre heat oven to 350 degrees F.

In a medium pan, heat oil and add onions and green peppers. Sautee for 2-3 minutes, then add chicken and 3/4 of the enchilada sauce. Heat for another 8-10 minutes or until chicken is completely cooked. Season with salt and pepper to taste.

Fill each tortilla with a good amount of chicken mixture, and add in some green chilis, beans, and corn. Close the tortilla and place in a large baking dish.

Add the remainder of the enchilada sauce on top of the tortillas.

Add cheese and sour cream on top, and place in the oven uncovered for 20-25 minutes.

Garnish with cilantro, and serve warm. Enjoy!
