Southern Peach Cobbler

Ingredients

  • 8 fresh peaches peeled and pitted, sliced into thin wedges
  • ¼ cup brown sugar
  • ¼ cup white sugar
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp fresh lemon juice
  • 2 tsp cornstarch
  • 1 cup all purpose flour
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 6 tbsp unsalted butter chilled, cut into small pieces
  • ¼ cup boiling water

Topping

  • 3 tbsp white sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 425 ° F (220° C).

  2. In a 2 quart baking dish, combine peaches, ¼ cup white sugar, ¼ cup brown sugar, ½ tsp cinnamon, ¼ tsp nutmeg, lemon juice, and cornstarch. Mix well. Bake for 10 minutes.

  3. Meanwhile, mix together flour, ¼ cup white sugar, ¼ cup brown sugar, baking powder, and salt in a large mixing bowl. Break in pieces of butter and mix well until mixture forms a coarse meal like texture. Pour in boiling water and mix until just combined.

  4. In a small bowl, white sugar and ground cinnamon.

  5. When peaches are done baking, spoon out mixture evenly on top of peaches. Sprinkle with white sugar and ground cinnamon mixture. Bake for about 30 minutes or until the top is golden. Enjoy!
