Easy Jambalaya with Chicken, Shrimp, and Sausage

Ingredients

  • 1 tbsp olive oil
  • 1 lb chicken breasts chopped
  • 1 medium white onion chopped
  • 1 medium green pepper thinly sliced
  • 2 cloves garlic minced
  • 10 ounces andouille sausage sliced
  • 8 ounces shrimp
  • 1 tbsp Cajun seasoning
  • 2 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup long grain rice uncooked
  • 400 g canned tomatoes
  • 2 1/2 cups chicken stock

Instructions

  1. Heat olive oil in a large frying pan and cook chicken breasts for 6-8 minutes. Place in a bowl and set aside.

  2. In the same pan, cook onions for 3-4 minutes until translucent. Add red pepper, garlic, chorizo, shrimp, and cajun seasoning. Cook for another 5 minutes.

  3. Add the chicken back in along with Worcestershire sauce, salt, and black pepper. Stir in and add rice, tomatoes, and chicken stock. Bring to a boil, reduce heat, cover and simmer for about 25 minutes or until the rice is completely cooked and liquid is absorbed. Enjoy!
