Gluten Free Double Chocolate Muffins

Ingredients

  • 2 1/2 cups oat flour (pulse oats in a food processor)
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 tbsp baking powder
  • 1/4 tsp salt
  • 2 whole eggs
  • 2 large bananas mashed
  • 1/2 cup non-dairy milk
  • 3 tbsp melted coconut oil
  • 1/2 cup apple sauce
  • 1/4 cup stevia
  • 1 1/2 tsp pure vanilla extract
  • 1 cup dairy free chocolate chips

Instructions

  1. Preheat the oven to 350°F. Spray a muffin pan with olive oil or nonstick ingredient of choice.

  2. In a large bowl, mix together the oat flour, cocoa powder, baking powder, and salt.

  3. Add eggs, bananas, milk, coconut oil, apple sauce, stevia, and vanilla. Mix well. Fold in chocolate chips and mix until evenly incorporated.

  4. Spoon batter into muffin pan until 3/4 of the way full. Place in the oven to bake for approximately 16-24 minutes. Insert a toothpick in the middle to test and ensure the muffins are cooked all the way through — toothpick should come out clean with a few muffin crumbles on it.

  5. Once the muffins are finished, allow them to cool completely for 1-3 hours. Enjoy!
