Sweet Potato Cashew Bean Burger

Servings 8 patty’s

Ingredients

  • 1 cup sweet potato peeled and diced
  • 1 tbsp olive oil
  • 1 tbsp oregano
  • 1 tbsp parsley
  • 1 tbsp thyme
  • 1/2 cup raw cashews soaked overnight
  • 1/2 cup chickpeas cooked
  • 1/2 cup black beans cooked
  • 1/2 cup instant oats
  • 2 tbsp ground flax seeds
  • 1 tbsp vegetable broth powder
  • 1/2 tbsp sweet paprika
  • 3 cloves garlic minced

Instructions

  1. Pre heat oven to 350°F.

  2. Place sweet potatoes in a bowl with olive oil, parsley, oregano, and thyme. Mix well and pour out onto a baking sheet. Bake for 25-30 minutes or until soft and tender.

  3. Meanwhile, place soaked cashews, black beans, and chickpeas in a food processor. Blend until a thick dough-like texture is formed. Fold mixture into a large bowl.

  4. Once potatoes are cooked, add them to the food processor and blend until smooth. Add them into the bowl with the cashews, beans, and chickpeas.

  5. Add remainder of ingredients. If the mixture is not thick enough, add another 1-2 tbsp of oats. They will harden up in the oven so be sure not to add too much.

  6. Line a pan with parchment paper and spoon out burger mixture, flattening and shaping with the back of the spoon to make patty's. Place in the oven to cook for 20 minutes or until slightly hardened. Serve on a bed of salad or a bun, and condiments of choice!

    Note: Remove burgers from oven before they are completely hardened. They are tastiest when nice and tender!
